Our family’s story begins in Spain tied to the land, to agriculture, and to the way food has always been made there. Life forced us away during the Spanish Civil War, but we never lost what mattered: respect for ingredients and a belief that food should be honest.
Years later, we came back.
La Roja is part of that return making food in Spain, with Spanish ingredients, using Spanish methods. Not because its trendy, but because its how it should be done.
Tomatoes didn’t originate in Europe.
In the early 1500s, Hernán Cortés returned to Spain from Mexico, bringing tomatoes with him. At first, they were seen as a curiosity. Over time, they took root in Spanish soil and culture.
Across generations, tomatoes became central to Spanish
cooking slow-cooked, balanced, and treated with care.
La Roja follows the same belief.
Don’t complicate the tomato. Let it shine.
